Hey everyone. My team is on the Enterprise account and on the entity limit policy doc it says that we should have a limit of 100,000 applications. However, we hit a warning when our applications approach 100. Has there been some update to the policy?

There has not been an update in the policy regarding reducing the entity limit.
Your Enterprise plan still entitles you to 100,000 applications. The warning you are hitting at 100 applications is a default soft limit that Auth0 places on all tenants out-of-the-box.
You will safely be able to create more applications within the Dashboard.
