Is the flutter package auth0_flutter specific to Auth0 users, or will it be possible to use this package to connect with any identity provider that fully supports OAuth protocol?

The idea behind each of our SDKs is to give you a friendly interface to do everything that our Dashboard and APIs offer. We believe in the idea that what can be achieved through clicking in our Dashboard should be also programatically doable through our APIs and SDKs so getting back to your question I think yes 
You can always confirm that with the SDK maintainers by creating a GitHub issue and asking it there!
