I referenced this example of a tenant.yaml file.
It mentions that any setting on the Management API’s Get tenant settings endpoint can also be changed on the Auth0 Deploy CLI.
From there, I got my tenant settings and found that the sandbox_version property references the Node version configured on my tenant.
