I am trying to migrate from the classic universal login to the new universal login. Has anyone gone through a similar situation? If so, what was your strategy in updating to the new universal login in each of your environments?

Were you able to get this sorted? It really depends on your environment(s) but nearly all relevant Auth0 SDKs provide a way to initiate a web based auth flow via Universal Login.
At a tenant level it’s as easy as navigating to Branding → Universal Login → Advanced and selecting “New”:
