I’ve set and verified my custom domain under my tenant settings and it says (ready) next to the name with “test” and “delete” options so my CNAME is all good.
Yet my application still shows the xx.auth0.com as the domain under it’s settings. How do I change that read-only input to my custom domain?

Do not believe that will change - when using universal login the custom domain can be used rather than xxx.auth0.com, is all that really changes.
Also when accessing the management API, it still uses the xxx.auth0.com domain - it does not work via custom domain.
Your tenant will still be named based on your auth0 tenant domain; the custom domain is mainly to allow a better UX for your users, where they can see your domain in the Universal login page rather than xx.auth0.com.
