I am actually baffled that this seemingly standard feature is not available by default yet.

+1 it feels like at least half of SaaS relies on API keys
I agree with the opinion that it would be best if API keys were available in Auth0, but have you considered any tools which aim to fill this gap? Like, for e.g. Zuplo or Oneloop?
Quite a showstopper to not support this
It’s been a few years since this was raised, and it’s still not here by the look of it. Let’s hope Auth0 are better at providing this basic feature compared to Atlassian who only took 8 years to add a basic feature.
