Your Auth0 log retention period depends on your subscription level.
Depending on your subscription level, Auth0 only keeps the logs for the deleted user until the time of deletion.
You can check the Log Data Retention.
Also, if the user was deleted on a specific day, it may take 24-48 hours before all the data becomes available for display. That’s why you are not seeing all the activities. More information here: Activity page does not immediately display the most recent events
