Is the user information returned on a successful login fully customizable? Can I store any of the users chosen settings or will I need to take a unique identifier returned from the Auth0 DB and use that to store user settings/data in my own DB?

Welcome to the Community!
You can store authentication related data in the metadata objects in the user profile.
You don’t want to store all of your user data in Auth0, typically you want to stick to things that are auth related, like a subscription tier, external ID, profile preferences, etc.
