Was look in the documentation how to enable and disable apps that are configured for my tenant from the management-api but not really sure where to find it?

What you actually mean by saying disable the app? Even through our dashboard when it comes to similar operations you cannot disable an app you can delete it and here’s the endpoint to use for that:
